Notes: IIT Guwahati researchers have developed an ultrasound-assisted fermentation method to produce a sugar substitute called ‘Xylitol’.
It is developed from sugarcane bagasse, the residue left after crushing of sugar cane. The product also overcomes the limitations of chemical methods of synthesis and the time delays associated with traditional method of fermentation. It also has potential anti-diabetic and anti-obesogenic effects.
